Vegan airline pilot meal prep: Low carb, high fat/protein

For this 3 day trip, I packed low carb, high fat, and high protein. It's all vegan as well! For breakfast, I have Vega Sport protein shakes and almonds. For lunch, I cooked Gardein chicken and Field Roast Sausages. I will eat those with broccoli and green beans that I sauteéd with coconut oil. I will also throw in some avocado. For snacks, I have peanut butter and Rise Vegan protein bars. I am set!

Vital Root vegetarian restaurant - Denver, CO.

We visited a great vegetarian restaurant in Denver called Vital Root. Chef Isaac sat down with us and shared two of their signature dishes. It is not often I get to try such unique dishes. The rice-less risotto was particularly savory. The fact that it tasted like real risotto but was made from sunflower seeds was mind-bending to say the least. If you are in the Denver area, you should definitely swing by Vital Root.
